Unlike refined white sugar, honey contains small amounts of vitamins and minerals, and can vary significantly in flavor and color depending on what types of flowers the bees are pollinating. For example, the woody, earthy flavor and deep brown color of Northwood's buckwheat honey is much different than the malty flavor and moody color of the honeycomb mostly made by knotweed.
