Where It All Began

Claire started Butterfly Bakery of Vermont in 2003, baking cookies and granola in the middle of the night in a rented café between her shifts in other kitchens. What began as a side project quickly grew through determination and a love of real food. Her sensitivity to cane sugar inspired her to create recipes sweetened only with pure Vermont maple syrup, a choice that made her maple baked goods both uniquely delicious and rooted in Vermont tradition.
