🌱🌶️ Late Spring Foods 🌶️🌱
It's spring in Vermont, which means the weather is constantly throwing curveballs. 80°F and sunny one day but a 45°F downpour the next? That's Vermont and I love it. I can eat grilled burgers with a cucumber salad on a warm evening with the knowledge that I don't have to say goodbye to hearty soups just yet.
Like many condiment lovers, I have a fridge door full of hot sauces, mustards, salsas and more. But I always have a rotating cast of current favorites that sit near the front and these are are what I'm noshing on now!
🧅 Maple Wood Smoked Onion Hot Sauce 🧅
Ok, so this one is pretty much always on hand. I have a bottle on my desk at work too. It's just so versatile and delicious. The light smokiness gives a supporting, but not overwhelming flavor. The sweetness of the onions is the perfect compliment so many dishes - especially cheesy foods like pizza and goat cheese salads.
🌮 Mellow Vibes Only Taco Hot Sauce 🌮
I love our Hot Ones sauce Taco Vibes Only, but I eat super spicy food for work (sometimes before breakfast), so I like to mellow things out for dinner. Mellow Vibes is my perfect "slather it on" heat level and I just love the cumin/coriander/garlic/lime combo. We use sweet carmen peppers in this sauce, which have recently become a favorite for me to blend into hot sauces. They have similar flowery notes to the ghosts and reapers, but with a sweet juicy flesh. I really like Mellow Vibes for tacos, burritos and beans. It was perfect on the Somalian lentil soup that I had last night.
🌶️🏡 Hot House Hot Sauce 🏡🌶️
Sometimes I'm into a sauce just because it's popular at the moment (like when it's getting lots of news coverage for being on Hot Ones), so it didn't surprise me when Hot House showed up at the front of the fridge. But what did surprise me is how long it has stayed there. I developed Hot House with the goal of finding unique flavor combinations and not with versatility in mind. Hot House has more ingredients (13!) than any other BBVT hot sauce and I would have thought that that would have reduced the number of foods it would taste good on. But it just keeps working! Hot House tastes different depending on how you pair it. Putting it on burritos brings out the tomato and cilantro. Putting it on grilled fish brings out the lemon and dill. I know that I developed this sauce, but it still surprises me on the regular.
