Not the usual suspects

For the June Microbatch hot sauce drop, we decided to do things a little differently.
Most months we lean heavily on our favorite peppers: jalapeños, serranos, habaneros, ghosts, and reapers. They're favorites for a reason. But when you're lucky enough to work directly with small farms, you get access to a whole lot more than the usual suspects.
So this month we went into the freezer and pulled out some peppers that don't always get the spotlight. Boldog Hungarian peppers. Velociraptors. Beautiful, classic cayennes. Three peppers. Three completely different personalities. Three hot sauces that prove how beautifully diverse the pepper world is.

🌶️ Cayenne Parsnip Farmer's Daughter Craft Beer Hot Sauce
This sauce is built around the classic cayenne pepper, but it doesn't taste like the generic red hot sauces you're used to seeing on every diner table. Sweet Vermont parsnips and Farmer's Daughter craft beer from our friends at the Alchemist add depth and character while letting the bright, clean flavor of the cayennes stay front and center. It's the kind of sauce that really shines on bar-food like burgers, wings, pretzels and potato wedges.
Rhubarb season only comes around once a year, and we weren't about to let it pass us by. I pulled these stalks directly from my garden. The tart snap of rhubarb plays beautifully with the mountains of fresh ginger and the fruity heat of Velociraptor peppers. It's bright, punchy, and unlike anything else we've made this year. Try it with spring rolls, fresh strawberries or the simplicity of cream cheese on toast.
Boldog Hungarian peppers are the traditional paprika pepper, and they bring a rich, pepper-forward flavor that deserves far more attention than it gets. This sauce leans into that beautiful sweet-smoky character, creating something that's less about heat and more about depth of flavor. It is excellent on pizza, deviled eggs and a picnic pasta salad.
These sauces won't be around forever. That's the fun of microbatches. Once they're gone, they're gone, and we'll be off chasing the next delicious idea.
