Vermont is running on maple right now
We don’t boil maple syrup or work in the woods ourselves, but we get to work with some of the best people who do. And this is the weekend that reminds us just how much work goes into that one perfect ingredient.
The sweetest season is here.
All over the state, sugarhouses are firing up evaporators, steam is rolling out the roof vents, and people who know what they’re doing are turning tree sap into one of the greatest foods on earth.
Caramel. Cheese. A little divine intervention
It was... astonishing. The cheese and the caramel both transformed. Sweet, smoky, creamy, savory. It was that perfect bite you didn’t know you were missing. As my husband put it, “That’s way better than it has any right to be.”
The sweetest onions make the best hot sauce
I came up with the idea of smoking onions in the summer of 2016, when my husband and I were testing out our new smoker with the "will it smoke" game. Pro-tip: Smoked bananas are ... not good. Smoked walla-walla onions, on the other hand, are just bliss.
