How We Started Making Vermont's Table Sauce

Some sauces are for daredevils. Others are for special occasions. But Maple Wood Smoked Onion Hot Sauce is for every table, every day.

We smoke sweet Walla-Walla onions over maple wood until they’re rich and caramelized, then blend them with red jalapeños for a perfect balance of smoky, savory, and just-right heat. The result is a sauce that feels at home wherever it lands: on pizza, burgers, eggs, roasted veggies, cheese boards - even bagels and cream cheese.

It’s earned its place on Hot Ones and picked up awards along the way, but what makes it special isn’t hype - it’s how naturally it fits into everyday meals. For Vermonters, it’s a true taste of home. For everyone else, it’s a chance to bring a little Vermont flavor to the dinner table.

One bottle quickly turns into a household staple. It’s not just a condiment - it’s the sauce you’ll keep reaching for, no matter where you live.

We first cooked up Maple Wood Smoked Onion Hot Sauce in 2015, back when Vermont’s own Bernie Sanders was running for president. Bernie is a fantastic senator and we wanted to support him, so we brainstormed a hot sauce we could make year-round - just in case his campaign went the distance. Around that same time, my husband and I were experimenting with our new smoker and discovered that maple wood smoked onions were magical. They were sweet, rich, and irresistible, and when blended into a hot sauce, they were a perfect match to red jalapenos. 

We called the sauce Feel the Bern and donated a portion of sales in our personal names (Bernie doesn’t accept corporate donations). By the time the campaign ended, the sauce had taken on a life of its own. Folks bought it the first time for the politics, but they came back for the flavor. So we kept it, adding it to what was then a very modest lineup of just four sauces (hard to believe now!).

By 2017, it had climbed to our #2 spot, second only to our Heady Topper collab. And in 2018, when it was tapped for Season 7 of Hot Ones, it officially became our best-seller - a crown it still holds today.

It’s flavorful without overwhelming, complex yet simple (just four ingredients!), and somehow manages to hit every note you want in a hot sauce. And the wild part? It almost never existed.
