It's All About The Ladies

We get our goat's milk from two farms

When Fat Toad Farm started, our milk came from our own goats, right on our own farm in Brookfield. But after a few years we realized that to reliably produce the best caramel we needed to keep our attention focused on the caramel and let full time farmers focus on the goats. We sent the herd down the road to Ayers Brook Farm in Randolph and turned our attention to perfecting our technique.

But goats aren't machines that produce the same amount of milk year round. So when the herd at Ayers Brook is producing less milk we needed to have a second farm that could make up the difference. We had learned that what the goats eat matters in how our caramel tastes, so we needed to find a farm that fed their goats mostly dry feed, instead of silage. Dry feed produces a milder milk that tastes better when we cook down and concentrate the flavor in our caramel.

Joneslan Farm recently switched their farm from cows to goats and learned a lot along the way from the owners of Ayers Brook, so they were the obvious choice for our off-season milk. We are fortunate to have so many amazing goat dairies in Vermont that we are able to choose the just right milk to make our caramel its very best!
