Artesano in Groton, Vermont, makes this amazing organic white vinegar that we use in many of our hot sauces. It's not distilled, but actually twice fermented from sugar, much like apple cider vinegar. It is still alive, so you will see a mother settle in the bottle over time.
When we were buying our barrel for our most coveted hot sauce (Rum Barrel Fermented Smoked Jalapeno), we realized that we could take this amazing vinegar to a new level. So we bought an extra barrel and started barrel aging the vinegar. The result is a sweet, woody and complex vinegar that is amazing on fries, sushi rice or salad dressing.
