It matters what our farms feed their goats

Goats can be quite happy eating a lot of different things. But what they eat affects the flavor of their milk. And the best milk for our caramel is mild and sweet. So we buy our milk from Ayers Brook Farm and Joneslan Farm that both feed their goats mostly dry feed and very little, if any, silage. Silage can give goat's milk a stronger "goatier" flavor, whereas dry feed gives us that sweeter, milder milk. Then we can cook the milk down to that beautiful, nutty, caramelly perfection with the subtle tang of goat's milk.

The subtle tang means that our caramel is fantastic for both sweet and savory uses. Adding a 2 oz jar of our Original Goat's Milk Caramel to a cheese plate is an absolute game changer. And the Vermont Maple is just everything on Sunday morning waffles. What's your favorite way to enjoy our caramel?
